I can't believe summer is already here and the 4th of July will be here in just a week and a half! Summer time picnics always leave me searching for a great recipe to wow my friends. Since I haven't posted a Too Good Tuesday in a while, I figured I would post a summery recipe.
This is a recipe that is super easy. I cannot remember which cookbook I copied this from years ago, but it is still one of my favorites!!
Enjoy!
Ingredients
1 (15 ounce) can black beans
1 big red onion
1 package cherry tomatoes
1 or 2 small ears of corn, steamed and cut off cob
1/2 cup fresh cilantro
1 garlic clove
2 tablespoons lime juice
1 1/2 teaspoons ground cumin
1 tablespoon wine vinegar
1/2 cup olive oil
1 teaspoon salt
1/4 teaspoon fresh ground pepper
Mince the garlic, and chop the onion and cilantro. Drain the black beans and rinse thoroughly. Combine all ingredients and refrigerate.
